I have seen some AMAZING dips when at the local supermarket and you know me I get thinking and all of a sudden I'm wondering if I can convert these dips for the Thermomix and make them at home! Below is my take on a classic Red Capsicum, Feta & Cashew Dip!
Not having tasted the store bought version - this was still a HUGE hit in our house! Let me know what you think. :)
ThermoFun – Red Capsicum, Feta & Cashew Dip

Ingredients
- 250g large red capsicum, quartered
- 150g cashews, unsalted
- 15g olive oil
- 75g feta cheese
- 20g Greek natural yoghurt
- 1 tablespoon balsamic vinegar
- 1 teaspoon white vinegar
- 30g parmesan cheese, cubed
- 1 garlic clove, peeled
- 1 red chilli, deseeded
- basil, dried, generous sprinkle
Instructions
- Place all ingredients into TM bowl and chop 1 sec / Turbo.
- Scrape down and repeat to desired consistency.
- Enjoy dip with crackers!

Does the parmesan make a massive difference? Can I leave it out and it still taste fab? Thanks!

Katie to be honest I haven't made it without the parmesan! If you can't eat it from an allergy point of view yes I'm sure it would be ok but I'd reduce a fraction of the liquid too. If it is a matter of you getting to the shops to get parmesan, I'd hold off till then to make it. :)

I would say up to 5 days Bianca. However they all freeze well too! :)

I substituted the red capsicum for a jar of chargrilled eggplant. Amazing!! Had it with home made seed crackers. Didn't last long!

So yum! Made it as per the recipe but instead of blitzing it on Turbo I just mixed it on Speed 7 for 3 seconds. This will be a regular in our home, really easy and tasty!!

This was really yummy. Substituted cashews for macadamia and yogurt for sour cream. Was really good on bagel chips. Thank for sharing.

Yum!!! I actually substituted ricotta (made in the TMX) for the feta and yoghurt as I didn't have any and it was divine!!! I roasted the peppers first for some sweetness….
I can't stop eating it - thank you for the share.
