I've divided this post into three sections: First, a selection of vegan recipes from around the internet that are not only quick and easy to make, but also feature frozen or canned vegetables for minimal chopping and prep work, a short list of accessible ingredients and/or are one-pot wonders for easy clean-up.

Next, I've listed some of my favourite vegan cookbooks for quick and easy recipes.
